The Melancholy of Haruhi Suzumiya:
The Melancholy of Haruhi Suzumiya follows the high school life of Haruhi Suzumiya, a young and very active high school girl, and those who are caught up in her antics. While Haruhi is the central character to the plot, the story is told from the point of view of Kyon, one of Haruhi\'s classmates. Kyon is an ordinary freshman high school student who has recently given up his fantasies of espers, time travelers, and aliens as he left middle school. When he chooses to speak to Haruhi, he unwittingly sets off a chain of events which drag him into surreal situations; he is drawn further into a world eerily like the fantasies he had just managed to outgrow, with Haruhi at its center.
Karin:
Karin is the middle child in a family of vampires who immigrated to Japan two centuries earlier. She is different from the rest of the family in that she produces blood instead of feeding on it. So she has to inject blood by biting someone or else she suffers exaggerated nosebleeds. Karin´s life looks like as of an ordinary teenage girl, but she is regarded as a freak by her family. She is able to venture outside during the day and attend high school, and follows the sleep pattern of normal humans. At someday her usual life gets interrupted as the new transfer student, Kenta Usui, arrives.
Haruhi is funny, and awesome. Karin is also funny, but made me cry once..

Fullmetal Alchemist is good, but I thought the ending sucked.
EDIT: Forgot Fooly Cooly. I can't really explain that one, because there really isn't anything you could call a plot in it.

I absolutely love Wolf's Rain. my main computers are named after characters from WR, which is a high honor (my old laptop is Toboe, one desktop is Kiba, one desktop is Hige, and another laptop is Tsume, the rest of my computers are named after ships/stations from Star Trek, mostly).
Wolf's Rain is about a group of wolves that can disguise themselves as human. Their ultimate purpose, as specified by something called the Moon Tome, is to find paradise. 30 half hour episodes for a total of 15 hours. it gets broadcast in the US on occasion, but usually at like 1 in the morning. I recommend renting it on DVD or via a download service (I think Netflix has it).
Note: I have been told (but have not verified) that the DVD version, at least as distributed in the US, is overdubbed to English. If possible, I would strongly recommend finding a copy with the original Japanese, subbed in your language. The version distributed in Japan probably includes English subtitles, if you can get a hold of it. I absolutely despise overdubbing.

Probably doesn't even need to be said, but the early seasons of Pokemon. If you've never watched those, you can't claim to have grown up in the 90s. Cardcaptors (That's the Americanized title; real title is Cardcaptor Sakura) is another one I watched back in the day. Man, being eight years old was awesome.
Post-review-edit: Agreed with George. To throw in another popular forum quote, if diversity were strawberries, anime-watchers spend their days drinking smoothies. Credit to spect and Condog for the references. I feel so old.
